Domestic Dehy Program

Dehy has a presence at US retail and foodservice and is used as an ingredient in snack foods and bakery applications.

The retail market (supermarkets) is worth approximately $306.5 million and 102 million pounds, but has declined in dollars and pounds for the past four years. The foodservice market is dominated by institutional foodservice (colleges, hospitals, nursing homes), with limited usage in other segments, except one major quick serve restaurant.

Following meetings with the dehydrators, it was determined there were specific steps the USPB could take to increase the use of dehy:

• Identify new usage opportunities, specifically application studies within the bakery sector
• Communicate new applications to both processors and the bakery industry
• Support processors in developing markets with the new applications
